Meet Chef Francis Camilo, Executive Chef at Calle Sol Plaza Midwood

There’s a new name leading our kitchen in Plaza Midwood, and he’s already cooking up something worth the trip. We’re thrilled to welcome Chef Francis Camilo as Executive Chef at Calle Sol Plaza Midwood. He brings nearly two decades of experience, a deep respect for flavor and one very good plate of fried cheese.

Chef Francis Camilo: From Nobu 57 to Plaza Midwood

Chef Francis began his career 18 years ago at Nobu 57 in New York. There he built his fundamentals. He also learned to move easily between cuisines, blending ingredients and techniques from different cultures.

Later, he brought that foundation to Charlotte in 2015. He sharpened it in the kitchens of the Grand Bohemian, The Ritz-Carlton and Marriott City Center. Along the way, he learned what separates an impressive meal from a truly excellent one: the relationship with the guest.

Cooking That Starts at the Table

For Chef Francis, however, it all goes back to family.

“My cooking origin story began at my grandmother’s table. Every weekend she’d gather the grandchildren for a long, unhurried meal, and those memories of family gathered around the table sparked a passion for cooking I’ve carried with me all these years. At Calle Sol, I want guests to leave with a similar feeling: a sense of belonging and a stomach full of flavors of a home-cooked meal, made with intention.”

In short, that’s the kind of hospitality we believe in. We can’t wait for you to taste it.

First on the Menu: Queso Frito con Guava

In fact, Chef Francis wasted no time. His first addition to the Plaza Midwood menu is Queso Frito con Guava. It’s golden fried cheese served with a guava dipping sauce and finished with flaky sea salt. It’s crispy, savory and a little sweet, perfect for sharing (or not).

What’s Next

As Executive Chef at Calle Sol Plaza Midwood, Chef Francis Camilo will lead the location’s culinary program. That includes menu development, sourcing, kitchen operations and building the team. As a result, you can expect more dishes that honor his heritage. Each one will reflect what Calle Sol has always stood for: be true to yourself and never compromise on quality.

“Francis has extensive experience under his belt, including an impressive stint at Nobu in New York, and we are grateful to have him leading our kitchen. He’s already making an impression on the Calle Sol culinary landscape and we look forward to seeing what else he creates for our guests.”
